Friday night was our first real date night in Conway. It consisted of a great homemade soup in the crock pot (which I’ll post below), a walk in our neighborhood, and a very scary movie.

Vegetable Soup Recipe

4-5 Red Potatoes, quartered or sliced

1/2 Bag of Baby Carrots

1/3 Cup Brown Sugar

2 Cans Rotel

1/2 Jar Picante (or any salsa you have on hand)

Minced Onion (just sprinkle it in)

Minced Garlic (again, just sprinkle it in)

Salt

Basil ( I skipped this part, I didn’t have any on hand)

Mexican Seasonings (again, I skipped this and just used cilantro flakes)

Italian Seasonings (just sprinkled some in)

1 Box Chicken Broth

3-4 Chicken Bouillon Cubes

Cover the remainder with water

**Cook this in your crock pot on high all day**

When you’re about 2 hours away from dinner add:

Yellow Squash (Recipe calls for 3, I used 1– I was running out of room in my crock pot)

2 Cans Black Beans

1 Bag Frozen Corn

1 Bag Frozen Green Beans

Mushrooms

Taste it, and if it’s got too much kick for your liking, add some more brown sugar. If you want more of a kick, you can add Tabasco to it.

 

This is my mother-in-law’s recipe. Chase used to dread having vegetable soup for dinner as a kid, but we had it this past weekend when we went to visit and it was SO good. I was lying in bed at 11 p.m. at night wanting to sneak back upstairs and heat up another bowl of it. I just loved the flavors of the soup. My mother-in-law is very good at cooking and not measuring things! Everything turns out great for her. I was a little nervous when I made this, but it turned out great. She told me you can pretty much make this soup your baby and add whatever you like to it, or don’t add items above if you don’t like them. Over all, the soup has WONDERFUL flavor. It’s going to become a staple in my house now (good thing Chase likes it better now that he’s older)!

This post is getting wordy. I’m sorry. The other part of our date night last night was a trip to the theatre. We went and saw The Woman in Black. Let me tell you, that was a freaky movie, but very good (and clean!). Here’s the trailer if you want to check it out… Just make sure to not drop your popcorn when you jump, and you will jump!
